Our quickest growing red beet is a no-brainer as a microgreen. Lovely, bright stems add color to mixes while slender green leaves offer a pleasant earthy flavor. Beet microgreens are best grown separately from other elements of mixes, as the seed tends to be variable in size and days to true leaf can be longer than most microgreen varieties.
